A Carnivore’s Take on The Veggie Pizza

I’ve never been a huge fan of veggies. I didn’t eat them a lot growing up; except green beans I LOVE them! But it wasn’t until I started dating my husband that I started stepping out of my comfort zone when it came to veggies and I am so glad I did. One of the many reasons I fell in love with Jeremy is because he has always been great at getting me to try new things. His best work was sushi. Totally hated it before him and now I could eat it every day… If it wasn’t so expensive! Eventually I will try making it at home… but that’s for another day.

On Monday I shared my Eggplant Parmesan recipe with you, which was the first of many meals where I went in worried and came out loving it. A few weeks after that we had a pizza and movie night. I’ve always liked my pizzas pretty plain; black olives and pepperoni is my favorite. But I had learned that Jeremy has great taste and whatever he ordered usually was really good so I let him pick. He ordered the Supreme from Wasatch Pizza. And, as usual, I loved it! Ever since then, if we order pizza, we always get the supreme… with extra veggies!

I may have mentioned earlier that we are planning our first family vacation to California and Disneyland in a month or so. My way of saving the family money so we can play more (a.k.a. buy more Disney souvenirs) is to cut grocery costs this month. We are eating a few extra meatless meals and I am cutting out all store-bought snacks. I’ve been making more snacks and have even tried my hand at home-made Hot Pockets; which you may have seen on Instagram yesterday. When it came time to plan what pizzas would be on the menu for Friday Pie Day I knew a veggie pizza was a must!

I’m not going to lie; I was still a little unsure how I would feel about it. I am a true carnivore at heart… I love meat! I like vegetables now too, but eating all veggies for a meal is a little outside of my comfort zone. But this pizza was love at first bite! I think the sweet & savory sauce helped bring some of the sweetness in the veggies out. Not only did I love it but so did all the boys! Being so easy on the wallet, I know we will be making this pizza again… and again!

Ingredients:

1 Pizza Dough

1- 1 1/2 c Pizza Sauce ( you can totally use store bought sauce too, it just may not taste as good *wink wink*)

2- 2 1/2 c shredded cheese

1 tsp canola oil

1/2 c green peppers, diced

1/2 c red onions, diced

1/2 c mushrooms, sliced

1/4 c sliced black olives

1/4 c tomatoes, diced

1/4 c shredded lettuce

Directions:

Preheat oven to 425°

In a non-stick skillet heat oil over medium heat.

Add peppers and onions and saute until the become soft (about 3-4 minutes)

Roll dough out in pizza pan. Cover with sauce.

Add about 1 cup of cheese.

Sprinkle mushrooms and black olives around pizza.

Sprinkle about 1/4 cup of cheese.

Sprinkle peppers and onions and then another 1/4 cup of cheese.

Top with tomatoes and lettuce and remaining cheese.

Bake for 15-20 minutes or until crust is golden brown. I baked this pizza for 16 minutes and it came out perfect.

Even if you aren’t a big veggie fan I really think you will like this pizza… I did and I am one of the biggest lovers of meat out there!
