I’ve been on a real breakfast kick lately. I had my yearly check up last month and let’s just say I could stand to lose a few. Of course working out will help but I think the real reason I’ve gained weight is bad eating habits; too many sweets and not enough healthy meal options. Since we are starting to get back in to our school routine I figured now is as good a time as any to start making healthier breakfast choices and that way I will start the day off on the right foot and not munch on whatever is lying around as the day progresses. 

I still want breakfast to be delicious but I also know that the mornings are when we are most rushed so it has to be something quick too. So I asked my boys what their favorite breakfast foods were. After eggs and ranch (super gross I know) they said pop tarts were there favorite. I’m not a huge fan of the store bought kind mostly because I can’t pronounce a good portion of the ingredients, but I figured making a homemade version would be easy enough and something I could make ahead on Saturday or Sunday and just pop in to the microwave during the week. Even making them from scratch only took 15 minutes so if you don’t have time on the weekends you can still have a quick breakfast in the morning during the week. Not only are these easy to make but they are delicious too! A soft flaky crust topped with a vanilla glaze topping and packed full of sweet raspberry syrup. These have quickly become my (and my boys) favorite breakfast! Even better than ranch they said!

15 Minute Homemade Poptarts

Prep Time 5 mins
Cook Time 10 mins
Total Time 15 mins

Ingredients
  

  • 2 cups flour
  • 1/2 tsp salt
  • 1 tsp sugar
  • 1 cup butter
  • 1/2 cup cold water

Filling

  • 1/2 cup sugar
  • 1/2 cup water
  • 1 cup raspberries
  • 2 Tbsp cornstarch

Glaze

  • 1 cup powdered sugar
  • 2 Tbsp milk
  • 1/4 tsp vanilla
  • red food coloring optional

Instructions
 

  • Preheat oven to 425F

Filling

  • In a saucepan stir together filling ingredients and cook over medium heat for 5 minutes or until it starts to get thick.

Crust

  • While your filling is cooking mix together flour, sugar and salt in a large bowl. Cut in butter and stir with fork (or your hands) until clumps form.
  • Add cold water and stir until desired consistency is reached.
  • Roll out on a floured surface and roll to about 1/4" thick.
  • Cut into 10 rectangles
  • Pour filling into one half of rectangle and fold the other half on top.
  • Seal with a fork.
  • Bake for 10 mins.

Glaze

  • Mix together all ingredients in a small bowl. Spread on top of poptarts after you remove from oven.

Notes

You can freeze also. To reheat place on a microwave safe plate for 30 seconds.

Knowing my boys they were going to need more than Pop tarts to keep them full until lunch time. When I was at Walmart picking up a few back to school supplies I wanted to pick up a few groceries and saw these Quaker Real Medleys granola and yogurt cups. They looked easy enough to make; all you have to do is add cold milk. Another quick and easy breakfast idea…score!

And they are really good too! Each bite is full of fruit flavor and a nice crunch. They are the perfect addition to these pop tarts, or any breakfast really. Or even if you are running short on time; my husband loves taking these to work on days that he is running late.

    I honestly might make these in the morning. My kids would LOVE me!! They look delicious! I made my Berry yogurt into popsicles and they tasted SO yummy that way, better than the actual yogurt I thought!
