Make any celebration a little more fun with these Monsters Inc. cupcakes.

I’m excited to finally share these super yummy and easy to make cupcakes. When Statham asked for a Monsters University Party two weeks before his birthday I didn’t want to say no but I also knew I didn’t have much time to plan. I decided to keep things super simple and that went for the dessert too.

I opted to use a box cake cake make with a few modifications since it was so much easy to throw together and who doesn’t like Funfetti Cake right?! I also used store bought frosting and just added neon food coloring.

To make Mike Wazoski:

Put green frosting in a ziplock bag and cut a small whole in the corner. Swirl around starting on the outside and working your way in.

In a seperate ziplock bag add white frosting and make a small circle in the middle.

Using Wilton Black Sparkle Gel make a small dot in the middle of the white circle to complete his eye.

To make Sulley:

Using a #18 Star Tip make small clusters of purple dots on cupcakes (I did two dots per cluster and did three clusters)

In a separate bag use the same Star Tip and with blue frosting fill in the cupcake around the purple clusters.

Prep Time 20 mins
Cook Time 20 mins
Total Time 40 mins

Ingredients
  

  • 1 box Funfetti Cake Mix
  • 1 tub vanilla frosting
  • 4 eggs
  • 1 cup 2 sticks melted butter cooled to room temperature (I melted in the microwave and let cool for 30 minutes)
  • 1 cup milk
  • green purple and blue food coloring
  • black gel color

Instructions
 

Cupcakes

  • Preheat oven to 350F
  • Mix together cake mix with melted butter, eggs, and milk.
  • Fill cupcake tins 2/3 way full.
  • Bake for 20-23 mins.

Frosting

  • Take 1/2 the tub of frosting and mix in 20 drops of neon green food coloring to make Mike Wazowski's green.
  • Take 1/4 cup of frosting and add 10 drops of neon purple food coloring to Make Sulley's purple.
  • Take remaining frosing and add 15 drops of neon blue food coloring to make Sulley's blue.
  • See above recipe for how to frost cupcakes.
