Yummy, Creamy Cheesy Fries

If you like scalloped potatoes, or cheese fries, then you’ll love this easy side dish! I found my inspiration here on Just Get Off Your Butt and Bake (don’t you love the name?!) They do take some time to make (about 1 hour 30 minutes including prep time) so plan accordingly or you’ll be waiting to eat whatever else you are making these with. (I made this mistake the first time) After making these fries, and being intrigued by the name, I found more recipes on her site I want to try and hope they turn out just as well as these.

Ingredients:


2-3 potatoes (I used regular ol’ Idaho Russet potatoes)

1 1/2 cup whipping cream (a little less than a pint)
salt and pepper for seasoning
2 cups grated cheese (I always use Kirkland’s 3 Cheese Mexican Blend for any recipe that calls for cheese. Not only is it cheap but it tastes good and my boys love it)

Directions:


Preheat oven to 400°.


Cut potatoes into fries (click this link to see how I make my fries) and place in a greased 9×13 pan.


Season with salt and pepper.



Pour whipping cream evenly over fries.


Cover with at least 2 cups of cheese (Honestly, I probably used closer to 3).




Grease bottom of a piece of aluminum foil and place over pan (Grease it so the cheese doesn’t stick to it. Genius idea!)


Bake for 1 hour 15 minutes or until potatoes are tender.
