Two More Weeks of Meal Plan Inspiration

Happy Monday! I am so happy it is a new week. Last week was crazy busy with a lot of activities and family parties. I knew it was going to be busy so with the last meal plan I included several quick and easy meals so we wouldn’t be tempted to eat out and we did good. We only ate out one night and we had a gift card from Christmas so we didn’t spend a dime. Win-win right?! The next two weeks I included some of my favorite snacks and dinners as well as a few recipes from previous weeks that I have tweeked to make just right. Take a look, get some inspiration, and check back in the coming weeks for the new recipes to be posted!

Macaroni Bean Soup (recipe I created 2 weeks ago)

Cranberry Chicken Salad (recipe I created to use extra cranberries we have lying around)

Sloppy Joes with Mac’n’Cheese and green beans

Cheesy Beef & Noodle Bake (a family favorite that I’ll be posting soon)

Tomato, Spinach and Basil Pasta (New recipe; hope it turns out good)

(Baked) Fried Chicken with Mashed Potatoes and Green Beans (We had this last week and it was really good. Going to change the spices up a bit and I’ll post the recipe in the next few weeks)

Teriyaki Chicken with rice and zucchini

Chick-Fil-A Nuggets with Rosemary Fries and green beans

Orange Chicken with rice and zucchini(a recipe we’ve had a few times that was good, but not great. Made some tweeks and hopefully I’ll get it right this time)

Honey Citrus Chicken Enchiladas with black beans and Mexi-Rice (A new recipe I created. If all goes well it will also be posted in the coming weeks.)

    You are SO on top of things! Can I just hire you to come and create all of these for me? 🙂 I can’t wait for the soft pretzel recipe…..they are my husband’s favorite! Thanks for sharing all of these great (and simple) ideas….makes it feasible to manage during the week and doesn’t seem like it would become a daunting task!
