These sweet soft cookies are the perfect fall treat and they take less than 20 minutes to make.
Are you not just loving fall this year?! I love the warm weather we’ve been having during the day and the cool, crisp nights. Because we’ve had such nice weather we’ve been spending most of our days outside, and I don’t know if it’s the nice weather zapping my memory or new mommy brain but I have been forgetting about things and leaving them to the last minute (more than usual).
After forgetting to bring treats to our last two play groups I decided to stock up on some treat making essentials. When I went to Walmart for our weekly grocery trip I picked up a few of my fall favorites along with a few new treats. I love having NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels because they are so many ways to use and reinvent recipes with chocolate chips! Libby’s® Pure Pumpkin is also a favorite in our house because of it’s natural ingredients and how versatile it is. Of course I love making pumpkin pies with it, but I also love making my Pumpkin Smoothies and pumpkin soup with Libby’s too! Libby’s® also has a new Pumpkin Bread Kit that comes with everything you need to make loaves, muffins and more.
Another pantry staple I picked up was NESTLÉ® CARNATION® Evaporated Milk. I love the rich flavor it adds to frostings, pies, soups and more. It was the perfect way to add more depth and flavor to the cinnamon buttercream frosting in these whoopie pies. I also picked up a few packs of NESTLÉ® TOLL HOUSE® Pumpkin Spice Refrigerated Cookie Dough. Who doesn’t love Pumpkin Spice and these cookies are the perfect treat to share with the ones you love. My favorite part is how easy they make it to spread the joy of baking with friends.
I didn’t miss our treats for this week’s play date because one of the other moms text me an hour before we were getting together to remind me. I’m so glad I had picked up these essentials because I was able to make my boys’ favorite, whoopie pies, but with a fun fall twist. The best part is they were ready from start to finish in less than 20 minutes! I was able to make treats for playgroup AND shower before we left.
These whoopie pies are so soft and full of rich flavor. Not only are they quick to make but they are so easy to make too. The filling is just 5 ingredients and you can make it as the cookies are baking.
Pumpkin Spice Whoopie Pies with Cinnamon Buttercream Frosting
Ingredients
- 1 Pack NESTLÉ® TOLL HOUSE® Pumpkin Spice Refrigerated Cookie Dough
- 2 Tbsp NESTLÉ® CARNATION® Evaporated Milk
- 1/2 cup butter
- 3 cups powdered sugar
- 1-2 tsp vanilla
- 1 tsp cinnamon
Instructions
- Prepare cookies according to package directions.
- While cookies are baking add powdered sugar and butter into the bowl of a mixer and mix until combined.
- Slowly add in vanilla and evaporated milk and continue to mix until desired consistency is reached.
- Add cinnamon and stir to combine.
- Scoop frosting into a piping bag.
- Let cookies cool on cooling rack for 5 minutes before adding frosting.
- Top bottom of cookie (the flat side) with frosting and place the flat side of a second cookie on top of frosting.
