I’m all for making things quick and easy. These days, with two very active boys, I hardly have a minute to sit down and catch a breathe let alone spend hours coming up with and creating meals or snacks. But my boys like to eat. Really, I should say they LOVE to eat. Let me give you an example of an average day’s feedings with my almost 3 year old and 18 month old. Breakfast-2 eggs each and at least one bowl of cereal. Morning snack- banana or apple and a half of a smoothie. Lunch- 6 or 7 Dino Nuggets, Cutie orange and 2 slices of a Totino’s Pizza. Afternoon snack- cheese and crackers and remaining smoothie (if there is any) Dinner-whatever I cook they eat; and usually eat as much as me. Dessert/Night snack- fruit, popcorn, cheese and crackers or cookies (if I’ve made any). And sometimes they say they are still hungry!
I’ve been trying to get better at adding more variety to their snacks and making snacks (and meals) that will keep them full, longer. New Year’s Eve we had our annual “Pig Out Until We Pass Out”. Basically, we load up on all sorts of goodies (shrimp cocktail, lil smokies in a blanket, cheese ball, chips and dip, etc.) and we hang out at home and chow down on some food until we fall asleep. This year we bought a green onion cheese ball from the store and it was so good! My husband asked for it again last week and I was all for it until I got to the store and found out they were almost $6 each! I can create a whole meal for less than that! I’m not one that likes to say no to my guys so I did some quick thinking and remembered I had some leftover onion soup mix from one of the dips we made. I also remembered cream cheese being on sale for $1 and I already had green onions in the cart for another recipe. I could just make my own!
We all agreed, we like the homemade one better and it cost a fraction of what the store bought one does. Plus it was just about as easy to make as pulling the store one out of the fridge. I took the cream cheese out of the fridge and let it soften on the counter while I put my boys down for naps, which took me about 30 minutes, then just mixed everything together for 2 or 3 minutes and it was done. If you are looking for a gourmet-like treat that is sure to please the whole family and that won’t take the whole afternoon to make, pick up these 3 ingredients the next time you’re at the store.
3 Ingredient Green Onion Cheese Ball
Ingredients
- 1 8oz package cream cheese, softened
- 1 packet onion soup mix
- 1/4 cup sliced green onions
Instructions
- Put cream cheese and soup mix in a large bowl and mix on medium for 2-3 minutes.
- Stir in green onions.
- Form into a ball. (the easiest way to do this is to pour the cheese ball from the bowl on to saran wrap and roll it into a ball)
- Keep refrigerated until ready to serve.
Serve these with some crackers or chips and you’re sure to have an instant hit! This would be perfect for that big game we have coming up here in a few weeks. To get more appetizer inspiration check out my Appetizers Pinterest Board.
