Keep cool with this easy to make healthy alternative to ice cream.
I am loving summer this year! Well, I love summer every year but this year it’s especially fun because my boys are at an age where we can go out and explore nature and go on fun adventures. July is a busy month for us with family visiting, busy work schedule for daddy and lots of play dates. Not to mention we have just 10 weeks left until our family of four becomes a family of five! With being so busy I’ve tried to prepare snacks and treats that are healthy and good for us so we don’t get that 2pm crash where all we want to do is sleep.
One of my boys’ favorite fruits is watermelon and, in my mind at least, it is THE fruit of summer. I used our favorite fruit to make quite a few snacks last month, all of which I’ll be sharing through out July and August. I wanted to start with my favorite, this watermelon sorbet. I’ve been craving a lot of sweets during this pregnancy and this sorbet is a healthy way for me to crave my sweet tooth without eating a whole pint of Ben & Jerry’s.
It’s super easy to make and a great recipe to let the kids make too. The hardest part is waiting for the watermelon to freeze. What I like to do is buy one or two watermelons when they are on sale (or when my favorite Green River Watermelons are at the Farmers’ Market), cube them up and freeze them in 2-3 cup baggies so that whenever the cravings strike I can just take out a bag and make this sorbet.
- 5 cups watermelon cubed and frozen
- 1/2 cup cold water
- 1/2 cup sugar
- 2 Tbsp lemon juice
- Combine all ingredients into blender and blend on ice cream settings.
- Scoop into bowls and enjoy!
You can use any blender for this but I especially love my Blendtec. It has settings for just about anything you want to make and it blends everything smooth; no big chunks here! What’s your favorite way to eat watermelon?

Yes you totally can! I would let it sit in either the fridge for about 20 mins before serving to let it soften a bit, otherwise it may be hard to scoop 🙂
