Happy Friday! (Or any other day of the week if you are reading this any other day š ) I am loving the weather we are having lately. It’s still in the high 80’s the sun is shining and it just makes me happy! Makes my boys happy too! They love playing outside and it wears them out so they nap longer too. Warm weather is a win-win-win all the way around. Unfortunately I know that it can’t stay this warm forever; well not here in Utah at least. All you lucky Californians and Floridians I will totally be envying you when it’s snowing here!
To keep the feel of summer going as long as I can, I have been going to the Farmer’s Market every weekend. There is just something about fresh fruit and veggies that makes it seem summer-y no matter what the weather. Two weekends ago I bought a huge box of peaches planning on making lots of peach pies and some peach cookies; but life happened and only one pie got made. My boys love peaches though so most of them just got sliced up and eaten. However, by the end of the week I knew the remaining peaches didn’t have much longer left . I didn’t really have the time to make a peach pie and was craving something with a little more spice than sweet (which is really odd for me). We had just finished our last batch of homemade salsa and I was craving some more.
I was in the process of getting all the ingredients out when I saw the peaches sitting on the counter. They were screaming “Peel me, dice me and throw me in there too!” And you have to do what they say, of course! As I’m writing this I realized I haven’t posted my homemade salsa recipe yet so I will post that here in the next few weeks too. I was really happy how this salsa turned out since I kind of just through a bunch of stuff together in a bowl. It tasted great with homemade lime chips on Sunday and then again with tacos on Tuesday and last night with chicken enchiladas. I am not a huge spicy food fan and this was perfect for me! My husband who loves thing as hot as they can get really liked it too. And Rohrl and Statham, they have been eating it right out of the bowl! I’m hoping I get a few more ripe peaches this week so I can make at least one more batch… that way when the weather starts cooling down I can take the lid off and have a one more little bite of summer!
Ingredients:
5 peaches, peeled and diced
1-2 tomatoes, diced (I used one HUGE tomato)
1/2 cup red onion, diced (about 1/2 a medium sized onion)
1/4 cup cilantro, diced
1 Tbsp brown sugar
1 Tbsp lime juice
2 tsp chili powder
1/2 tsp cumin
Directions:
Combine all ingredients in a large bowl and stir to combine.
Store in an air-tight container in the fridge for up to 2 weeks (if you can stop yourself from devouring it all before then)
Can be frozen for up to 6 months.
