These sweet & spicy chicken tenders are the perfect quick & easy meal the whole family will love!
Summertime is finally upon us and I couldn’t be more excited! There is something about the warm weather and longer days that just puts a smile on my face. One thing that does become harder when it’s warm outside is remembering to cook lunch and dinner. Well, not so much remembering, but finding the time. When we’re out in the yard or at the pool it’s easy to loose track of time. That’s why during the summer I try to plan meals that take no longer than 30 minutes to make from start to finish.
These honey chipotle chicken tenders definitely fit that description. The sauce takes 15 minutes to make (most of that time is spent letting it simmer) and for the chicken I use my favorite, Tyson® Crispy Chicken Strips, which you can heat up in the microwave in minutes. When I was at Walmart doing my weekly shopping I was excited to see that you can get a movie ticket to see the new Teenage Mutant Ninja Turtles: Out of the Shadows in theaters now by buying two select Tyson® Chicken Nuggets, Chicken Strips, Tyson® Any’tizers® snacks, Ball Park® Flame Grilled Patties, State Fair® Mini Corn Dogs or Jimmy Dean® Pancakes & Sausage packages. Since chicken strips were already on my list I grabbed a bag and also a bag of the flame grilled patties; quick burgers are a great meal too and this sauce is tasty on them as well! When I got home I took a picture of my receipt, uploaded it and got a code to redeem for one movie ticket. My boys were pretty excited about that.
So much so that they wore their Teenage Mutant Ninja Turtle masks around the next few days; even when it was time to eat. But come on, look how cute they are, how could I say no to those faces?! Whether they had their masks on or not they are big fans of these honey chipotle chicken tenders.
The first bite was a little spicy for my youngest but we gave him a little ranch to dip them in and he was in heaven. Ranch makes everything better right?! The sweet from the honey and sugar are the perfect way to soften the heat of the chipotle sauce. I like to double the amount of sauce I make so that I can quickly toss some chicken strips or nuggets in it for days later and make lunch or dinner even quicker!
Ingredients:
Tyson Crispy Chicken Strips
Sauce:
1/3 cup honey
1/2 cup sugar
1/2 cup ketchup
1 Tbsp hot sauce (I like to use Frank’s Buffalo)
1 Tbsp vinegar
2 tsp chipotle adobe sauce (I get the small can of chipotle peppers and use the sauce from there. If you want a little extra heat and a pepper or two in while cooking and remove before tossing with chicken)
1/2 tsp salt
1/2 tsp garlic powder
1/3 cup water mixed with 2 Tbsp corn starch
Directions:
Combine all ingredients for sauce (except water/cornstarch mix) into a small pot and bring to a boil over medium high heat.
Reduce heat to low and stir in water/corn starch mix. Let simmer for 10 minutes.
While sauce is simmering heat chicken strips according to package directions.
Place chicken in a Ziplock bag and pour sauce on top. Seal Ziplock bag and shake to combine.
Like I said earlier, we serve these with ranch dipping sauce, fries (or chips for an even quicker dinner). This has quickly become one of my favorite meals as well as my husband’s and boys’ too. Do you have a go to meal that the whole family loves? I’d love to try it!
