This delicious dinner is packed full of flavor and tastes like it came from a restaurant, but you can easily make it at home in just 15 minutes.
We’ve been having neighborhood movie nights this summer and it’s been so much fun! The kids get to play, the parents get to talk and we all watch movies. Last week we were talking about dinners and how sometimes (well most of the time) it’s easier to stick to dinners you know your family likes and will eat instead of trying new recipes. That’s usually what I do when I’m planning meals. Four or five meals are tried and tested ones I know the kids will love, one will be a new meal and then we have leftovers the last night. And this Shrimp Scampi recipe is a regular on our meal plans.
Not only is this Shrimp Scampi super quick and easy to make but it’s packed full of fresh flavors too! My 5 year old isn’t a fan of the shrimp, but he loves the taste of the pasta so there is more shrimp for the rest of us – it’s a win-win! Most Shrimp Scampi dishes are cooked with a thicker noodle, like linguine, but I like to use angel hair pasta. Really I use angel hair pasta in almost all our pasta dishes that call for long noodles. I prefer the lighter feel of the noodles and they cook quicker which is a must with my kids.
This summer I’ve also been working on having my boys help me prepare meals (they are 5 and 6) and this is one dinner my 6 year old can make *almost* on his own (aside from me straining the noodles and turning on the burners). It’s that easy to make. So if you’re looking for an easy dinner idea that is packed full of fresh ingredients – this is the one for you!
- 1 pound medium shrimp (I usually get the pre-cooked kind and then just remove the tail)
- 8oz angel hair pasta (about 1/2 box)
- 2 Tbsp butter
- 4 cloves garlic, minced
- 1/4 cup chicken stock
- juice from one lemon
- zest from one lemon
- 2 Tbsp fresh parsley, chopped
- salt and pepper
- Cook pasta according to directions. Drain and set aside.
- In a large skillet, melt butter over medium heat.
- Add shrimp and garlic to skillet and cook for 3-5 minutes (if you're using raw shrimp, cook until it's pink).
- Add chicken stock, lemon juice and salt and pepper and bring to a simmer.
- Remove from heat and add lemon zest and parsley.
- Add in pasta and mix to combine.
