Chewy No Bake Granola Bars

In a small saucepan combine butter, honey, brown sugar, and vanilla and heat over medium heat until butter is melted and sugar is dissolved.
Turn off the heat and stir in oats and mix until evenly coated.
While still warm stir in half the chocolate chips until well incorporated. They will melt which will help act as extra glue to hold the bars together as they set!
Turn mixture into a foil lined 9x9 baking dish and press firmly into the pan until well compacted.
Add the rest of the chocolate chips and the dried fruit if using and press to push them down into the surface of the bars.
Refrigerate for about 2 hours or until firm, cut, and enjoy!
Store these bars in an air tight container in the fridge for up to a week. Leave them out on the counter for 2-5 minutes before serving for slightly softer bars.
