Shrimp Scampi

Ingredients
  

  • 1 pound medium shrimp I usually get the pre-cooked kind and then just remove the tail
  • 8 oz angel hair pasta about 1/2 box
  • 2 Tbsp butter
  • 4 cloves garlic minced
  • 1/4 cup chicken stock
  • juice from one lemon
  • zest from one lemon
  • 2 Tbsp fresh parsley chopped
  • salt and pepper

Instructions
 

  • Cook pasta according to directions. Drain and set aside.
  • In a large skillet, melt butter over medium heat.
  • Add shrimp and garlic to skillet and cook for 3-5 minutes (if you're using raw shrimp, cook until it's pink).
  • Add chicken stock, lemon juice and salt and pepper and bring to a simmer.
  • Remove from heat and add lemon zest and parsley.
  • Add in pasta and mix to combine.
