Breakfast is the most important meal of the day. We’ve heard that for years, but how many of us really give breakfast the credit it deserves? Especially moms. Our mornings are filled with making sure everything is ready for the day, the kids are dressed, lunches are made, homework is done, the list goes on and on. I’ll admit I haven’t always been good at eating breakfast. Most of the time I just finish whatever eggs my boys didn’t eat.

But this year I wanted to eat healthier and instead of committing to eating healthy all the time (that would have lasted less than a week) I committed to eating breakfast every day. No matter what it was, a bowl of cereal, eggs, smoothie, I promised myself I would eat something good for breakfast every day. And you know what… I have. And it’s made a big difference in our day!

Now I wake up excited to start the day! I used to have to drag myself out of bed (only after the kids pulled the blanket off of me first), get them something to eat and then sit on the couch and check Facebook or Instagram until they were done. Now, I wake up at 6, take a shower, get ready for the day and have time to myself before my boys wake up. After they wake up I get them dressed, which used to not happen until after lunch, and we go downstairs to eat breakfast and watch Daniel Tiger.

Eating eggs everyday was getting old so I started switching up our breakfast menu a bit. We are big fans of smoothies, especially this Triple Berry Spinach Smoothie, and I’ve heard smoothie bowls are all the rage so last week we decided to give one a try. I’ve also been moving our healthy morning habits into snack time, so when I was at Walmart picking up our weekly groceries I started looking for some healthy snacks too. I saw these Carnation Breakfast Essential® Drinks and drink powders. I knew the drinks would be great for my mid-morning snack and the chocolate powder would taste good in our smoothie bowls. So I added them to the cart and headed home.

Smoothie bowls are so easy to make. You just blend up your ingredients like you normally would, I added a little more almond milk to mine so it wasn’t as thick as my usual smoothie, then put it in a bowl and top with your favorite ingredients. Our Berry Banana Crunch Bowl was a success! My boys and I loved how the chocolate flavored blended so well with the berries and bananas and the crunch of granola on top was the icing on the cake (or smoothie).

Ingredients

1 cup almond milk
1 packet Carnation Breakfast Essentials® Chocolate Drink Powder
1 cup spinach
1 banana
1 1/2 cup frozen berry mix (I like to use blueberry, raspberry and strawberry)
Blueberries, raspberries and granola for toppings.

Instructions

Mix drink powder and milk together and pour into blender.
Top with spinach, banana and berries.
Blend until smooth.
Pour into a bowl and top with blueberries, raspberries and granola.

A healthy smoothie that is yummy too!

Did you make any new goals or resolutions this year? Was one of them to lose weight or eat healthier? It seems like every January I (with a lot of other people) decide to eat better then life happens and by the second week of the year we are back to our old habits. One of the many reasons I feel we have a hard time keeping our goals is time itself. We wake up late, forget the kids have a school project due, get stuck in traffic and it’s easier to pick up something through the drive-thru vs. eating healthier options at home.

So this year I’ve decided to not commit to healthy eating but making homemade meals easier. Only planning meals that I know I will have time to make (Check out the newest series 30 Minute Thursday every Thursday morning) and that don’t have extravagant ingredients that either go bad quickly or cost a bundle.

I’ve also started focusing on healthier breakfast options, healthier than Frosted Flakes, to get my day started off right. I combined a bag of frozen berries, some spinach and a few other ingredients to make this super tasty, healthy smoothie. I’m over at Pretty Providence sharing the full recipe.

30 Days of Breakfast

It’s a new year and time to start those New Years resolutions. I think whether we like to admit it or not when the new year starts we all want to try to lose a few pounds, work out more, stay organized or eat better; or all of the above. I’ll admit I’m in that boat. But I’ve also learned that setting too many goals makes the chance of me achieving any of them slim to none. So I’m focusing on three goals; being more organized (check back Wednesday for my new office organizers), working out for at least 15 minutes every day, and eating breakfast every day.

I may not be able to control the whole day but I do know that if I start the day off eating something I’ll feel better, have more energy and maybe, just maybe, those good habits will continue through out the day. So to get me started on the right foot I’ve compiled a list of 30 breakfast different breakfast ideas. Apple Turnovers

Enjoy a tasty breakfast or dessert with these sweet apple turnovers.

Don’t you love how a certain food can bring back happy memories? I remember when I was going up and we would go to my grandma’s house she would always have apple turnovers waiting for us. My grandparents lived 11 hours away so we didn’t get to see them very often but when we did we could always count on grandma’s sweet and flaky apple turnovers waiting for us.

Now that my boys are getting older I want them to have similar memories of good eats when they grow up. Last month I shared our go-to weekend breakfast, Dutch Babies, which is my boys’ favorite meal by far. But I also wanted them to taste some of my favorite meals from when I was a kid too. Unfortunately, we didn’t write down grandma’s recipe and she doesn’t remember it so I had to work from memory and taste.

Luckily, thanks to Kauffman’s Fruit Farms, those sweet, flaky, delicious turnovers were easy to replicate. It was hard for me not to eat all of these by myself, but I managed to save a few for my guys and they loved them too. Not only are they super yummy but they are easy to make too. I hope they can become as fond a memory for my boys as they were for me growing up.

Ingredients

17 oz package frozen puff pastry, thawed in fridge
2 apples, cut into bite size pieces
1/2 cup apple butter
1 egg

Glaze

1/2 cup powdered sugar
1/2 cup milk

Instructions

Preheat oven to 400F
In a medium saucepan combine apples and apple butter and heat over medium heat for 4-5 minutes until apples have softened.
While apples are cooking, cut puff pastry into 12 squares.
Brush outside edges of squares with eggs.
Fill puff pastry squares with 2 Tbsp apple butter/apple mix.
Fold over into a triangle and seal edges.
Bake for 15-18 minutes until tops are golden brown

Glaze

Combine sugar and milk until smooth.
Drizzle on top of baked turnovers.

Now that we are getting back in our school year routine I’m realizing that our 10am breakfasts consisting of Frosted Flakes and eggs aren’t cutting it anymore. I usually start feeling the drain about one in the afternoon and it’s all I can do to not fall asleep during nap time with my boys an hour later. I started reading a few healthy living articles and have decided the best way to have more energy through out the day is to start with a good breakfast.

Breakfast time is definitely the busiest time of the day for us. So my healthy, energy boosting breakfast needed to be something I could make quickly; and what’s easier to make than a smoothie! I put together a few of my favorite fruits and peanut butter and turned them into one super yummy, filling, protein packed smoothie that helps me get up and going in the morning and also helps keep my energy level up through out the day. It’s time for July’s Monthly Ingredient Challenge! Yes, I’m a few days late; but with Pioneer Day (the day we celebrate the pioneers coming to Utah; it’s bigger than the 4th of July here) and having family in town we got so busy I haven’t had much time to create recipes. In past months I’ve made dinners, desserts, drinks for the monthly ingredient challenge but I have yet to make breakfast. Well I’m changing that this month.

Have you ever been in a breakfast rut? You know, when you’ve had the same bowl of cereal or same egg sandwich everyday for weeks, months. That’s us. We have been enjoying Dutch Babies on the weekends but that’s just too much food for my boys and I during the week. I’ve also tried to start adding more variety to our meals. Instead of eating just a turkey wrap for lunch I’ve started adding some fruit and crackers to the mix too. I want to do the same thing with our breakfasts.

So when I was at the store and saw strawberries were on sale I new they would be a perfect addition to any breakfast (or lunch or dinner). Strawberries are our favorite fruit. You probably already know that from all the strawberry recipes I’ve shared, and we have loved having a side of strawberries almost every meal the last week. But it was time to incorporate them into the meal.

These french toast cannolis are bursting full of flavor, super easy to make and really filling too. Swapping out the ricotta cheese for cream cheese (July’s ingredient) really adds to the smooth, sweet flavor. So get yourself out of your breakfast rut and give these cannolis a try!

Ingredients

12 pieces of white bread
3/4 cup diced strawberries
4 oz cream cheese (1/2 a box)
1 egg
1/2 cup milk
2 Tbsp melted butter
cinnamon sugar

Instructions

Cut off the crust from bread.
Using a rolling pin, roll bread flat.
Spread cream cheese on bread.
Add 1 Tbsp of diced strawberries to bread.
Roll bread up and press end shut.
In a bowl whisk together egg and milk.
Dip cannolis into egg/milk mix.
Cook in skillet over medium-low heat for 2 minutes.
Flip and cook for an additional minute on each side.
Pour melted butter over cooked cannolis and sprinkle with cinnamon sugar.

There are a lot of things I love about weekends. Getting to sleep in, spending time with family all day and yummy breakfasts. During the week it’s usually just eggs and toast or cereal before we’re running out the door to start the day.

Recently I started making one of my husband’s favorite childhood breakfasts, Dutch Babies (or German Pancakes) every Saturday. They take less than 2 minutes to put together and they are SO good! I’m over at Utah Sweet Savings today sharing the recipe as part of Scrumptious Sundays.

Two (More) Weeks of Meal Plan Inspiration

Happy Monday! I am so happy it is a new week. Last week was crazy busy with a lot of activities and family parties. I knew it was going to be busy so with the last meal plan I included several quick and easy meals so we wouldn’t be tempted to eat out and we did good. We only ate out one night and we had a gift card from Christmas so we didn’t spend a dime. Win-win right?! The next two weeks I included some of my favorite snacks and dinners as well as a few recipes from previous weeks that I have tweeked to make just right. Applesauce Oatmeal Muffins and The Tasty Tuesday Link Party

Have you ever been grocery shopping and knew you were forgetting something but just couldn’t remember what? You had everything on your list but you just had this little voice in the back of your head saying “Hey don’t forget the…” and you can never remember what the the was. Yeah, that happened to me a few weeks ago. We had just gotten back from California at midnight the night before and we were pretty much out of food. That morning, after starting laundry and having the hubby run to Carl’s Jr. for some breakfast sandwiches I whipped up a meal plan and grocery list and headed to the store.

My boys were obviously still a little restless from our 11 hour car ride the day before because they were going crazy. I mean, touching everything, breaking everything crazy! Note to self: never take children ANYWHERE after an 11 hour car ride. As we quickly ran through the store getting everything on the list and trying to get out with as little damage as possible I had a stinging suspicion that I was forgetting something.

It wasn’t until the next morning, Sunday, that I finally realized what I had forgotten. Breakfast. Anything for breakfast. We had milk but that was about it. No cereal, no eggs, no pancake mix, nothin’. I couldn’t really skip breakfast and I didn’t really feel like cooking hot dogs for breakfast so I turned to Google to see what I could use in place of eggs. The first option that came up was applesauce. That I had, and plenty of it. Then I found this recipe for Oatmeal Muffins and decided to give it a shot. It was a huge hit! So much so that my boys asked for them again for breakfast every day that week. The applesauce makes these mini muffins super moist and the oats are a good source for fiber and make you feel full after eating one or two (unless you are a 1 1/2 and 2 1/2 and eat like there’s no tomorrow).

These make a great breakfast and snack for even the pickiest of eaters. I made them for a play date we had and they were gone in no time. So if you don’t have eggs, or are serving someone who has allergies to eggs, have no fear, these applesauce oatmeal muffins are sure to be a crowd pleaser.

Applesauce Oatmeal Muffins

Prep time: 20 mins

Cook time: 25 mins

Total time: 45 mins

Serves: 30

Ingredients

1 cup oats (I used steel cut)
1 cup milk (I used 1%)
1¼ cup applesauce
1 cup flour
¾ cup brown sugar
1 tsp baking powder
1 tsp cinnamon
1 tsp sugar
½ tsp baking soda

Instructions

Preheat oven to 400F.
Soak oats in milk for 10-15 minutes.
Add applesauce to oats and milk and stir to combine.
In a separate bowl combine remaining ingredients.
Add dry ingredients to wet ingredients and stir just to combine. Do not over stir.
Lightly grease mini muffin tins and fill each cup about ¾ full
Bake for 20-25 minutes until a toothpick comes out clean.
Remove muffins from tin and let cool on cooling rack.
