If you’re looking for a quick and easy dinner recipe that the whole family will love AND is good for you look no further. These lettuce wraps take less than 20 minutes to make and will have even the pickiest of eaters asking for seconds (and maybe even thirds)!
Almost every January most of us make a commitment to eat healthier. And by this time most years we are all back to our old ways. This year though I have an even better reason than getting into better shape to eat healthy. Mahle, my baby girl, has a sensitivity to dairy products and it has gotten worse as she’s gotten older. And since I exclusively breast feed anytime I have dairy (milk, cheese, yogurt, anything) it makes her sick and super fussy. So this year I’m sticking to a dairy free, healthy diet not just for me but for her too. These lettuce wraps fit perfectly into that plan.
I found this recipe from Damn Delicious and substituted Jennie-O Ground Turkey for the ground chicken. I like using ground turkey in place of ground beef or chicken because it has a lower fat content and I like the flavor better. My boys seem to like the flavor better too. Paired with fresh garlic and ginger and mixed with the hoisin sauce these lettuce wraps are packed full of flavor. The water chestnuts add a nice little crunch to them too.
- Head of lettuce (butter lettuce works best)
- 1 lb. Jennie-O ground turkey
- 1 (8oz) can water chestnuts, diced
- 1/4 cup hoisin sauce
- 2 cloves garlic, minced
- 2 Tbsp soy sace
- 1 Tbsp ginger, grated
- 1 Tbsp rice wine vinegar
- 2 green onions, thinly sliced
- salt and pepper to taste
- Cook ground beef in skillet over medium heat until browned (5-7 minutes)
- Add in hoisin sauce, garlic, soy sauce, and rice wine vinegar and stir to combine.
- Stir in ginger and green onions and cook for an additional 1-2 minutes.
- Season with salt and pepper and serve in lettuce leaf.
These wraps are perfect for lunches, dinner or even game day appetizers! The filling heats up great so a lot of times I’ll double the recipe and have the leftovers for lunch throughout the week.
